A high rye Super Saison brewed with Idaho clover honey and green peppercorns, aged eight months in rum barrels from Bardenay that previously housed their rye whiskey. Each barrel was treated to a unique peppercorn addition, one with white, one with pink, and one with black. The final product is a careful blend of each barrel and a little bit of fresh Saison, and exhibits high tone floral esters from the pink peppercorns and the old world yeast fermented warm, earthen almost dusty white pepper character along with the spicy rye malt and residual rye whiskey presence, zingy fresh cracked black pepper punch playing against the honey and rum richness, and a cognac and caper musky herbal and umami element from the wood, the green peppercorns, and the long aging. Expect a challenging amount of culinary complexity in a beer designed to be elegant and occasion worthy, suitable for indefinite cellaring.
