Baklava is the liquid embodiment of decadence, yet avoids the diabetic residuals commonly indicative of pastry beer. Every aspect of this beer is in service of the nuts, with the mash designed to reduce bitterness that could obscure their essence, the brown sugar and honey included to marry with their oily and fatty characteristics, the rye barrels hand selected to bring compatible wood and spice layers, and the cinnamon and vanilla intentionally restrained, meant to merely accentuate what is already here. Expect obvious contributions from all three nut varietals, a concentrated molasses type richness, indulgent chocolate and pipe tobacco notes, pleasing rye and cinnamon synergy, and a warming cozy palate coating experience that is as authentic to the famed and alluring dessert as is possible in a beer. This beer is bottle conditioned and will cellar well for many years.
